The Joy of Pyrex!

Today I cooked & baked a frenzy! I made a chicken & broccoli casserole with a marinated cucumber & tomato salad. For tomorrow's dinner I made a sweet potato casserole (a new recipe) which I just need to throw in the oven & the pork chops are defrosting in the fridge as I write. Rarely do I get into a cooking mood. You see cooking & baking are very different for me. Tonight though I went on a frenzy. I have no idea why. Tonight's dinner turned out well though.

After dinner, I continued on a baking frenzy making 6 dozen sugar cookies & pumpkin bars. Now all that is left to make the cream cheese frosting which I'll be doing after this post. Our son loves to help. He helped mix, pour ingredients & hand me eggs throughout all of it. Then of course, we got to taste! We love that part.

I took out the 9'x13' Pyrex pan & the took off the lid. My son's response was "Whoa!!!" Another thing you miss as an adult... the joy of Pyrex!

Tomorrow we're going on a tour of the local airport where our son & his playmate can get a close-up look at some of the planes that fly by here. How cool is that? They even told us to bring a camera! Now how could I forget that???
